Sopa Azteca (Aztec Soup)


This is a Mexican Inspired recipe that its a good source of vitamin C and perfect for when wits cold outside 

I used simple ingredients that you might already have at home! it feeds 4 people.
Garlic (or Garlic powder) 
corn tortillas fried 
1 can of tomato paste (or fresh tomatoes)
3 cups of chicken broth (we use Vegetable broth for meatless Fridays)
1/4 cheese (queso blanco or mozzarella)
salt and pepper to taste
avocados
cayenne pepper (if you like spicy)

- Boil broth and add tomato paste with garlic powder (if you use real garlic cut them in half and boil them with the mix only for taste, after 20 mins take them out) & add seasoning according to you taste.

- Cut tortillas in strips and fry them or buy in the supermarket already crunchy tortillas

- to serve: pour soup in the bowl, cheese grated, tortillas and avocado (we cut them in squares so its easier to eat)
